Jalapeno Cheese Corn Muffins

Description

These savory, tender muffins go great with any kind of Chili or southwestern dish!


Ingredients

Scale

3/4 cup Margarine

3/4 cup Milk

2 Tbsp Sugar

2 Eggs

2 cups Self-Rising Buttermilk White Cornmeal Mix

4 Jalapenos

1 cup Shredded Colby Jack Cheese


Instructions

  1. Turn on oven to preheat to 450 degrees.
  2. Cut off the outside flesh of 3 jalapenos to exclude seeds.  Dice the strips.  Slice the remaining jalapeno in thin round slices.
  3. In a large glass bowl, melt the Margarine in the microwave.
  4. Stir in Milk and Sugar.
  5. Add in Eggs and whisk well.
  6. Stir in Jalapenos and Cheese.
  7. Spray each well of a 12-muffin pan with Baker’s Joy and evenly divide the batter between the 12 wells.  Top each with jalapeno round slices.
  8. Put in the oven and cook at 450 degrees for 12-15 minutes.
