Ingredients

3/4 cup Margarine
3/4 cup Milk
2 Tbsp Sugar
2 Eggs
2 cups Self-Rising Buttermilk White Cornmeal Mix
4 Jalapenos
1 cup Shredded Colby Jack Cheese
Instructions
- Turn on oven to preheat to 450 degrees.
- Cut off the outside flesh of 3 jalapenos to exclude seeds. Dice the strips. Slice the remaining jalapeno in thin round slices.
- In a large glass bowl, melt the Margarine in the microwave.
- Stir in Milk and Sugar.
- Add in Eggs and whisk well.
- Stir in Jalapenos and Cheese.
- Spray each well of a 12-muffin pan with Baker’s Joy and evenly divide the batter between the 12 wells. Top each with jalapeno round slices.
- Put in the oven and cook at 450 degrees for 12-15 minutes.
